Vegan Ranch Pasta Salad

Ranch Pasta Salad:

  • Ingredients:
    • 8 oz (225g) gluten free rotini pasta, cooked and cooled
    • 1 cup cherry tomatoes, halved
    • 1 cup diced cucumbers
    • 1/2 cup diced red bell pepper
    • 1/2 cup diced red onion
    • 1cup dairy free sour cream
    • 1/2. cup vegan mayo
    • 2 tablespoons Sassy ranch seasoning
    • Salt and pepper to taste
  • Instructions:
    1. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumbers, red bell pepper, and red onion.
    2. In a small bowl, whisk together the Sassy ranch, mayo, and sour cream.
    3. Pour the dressing over the pasta salad and toss until everything is well coated.
    4. Season with salt and pepper to taste. Chill in the refrigerator for at least 1 hour before serving. Enjoy!
